Small Batch, Made Fresh!  Please allow us 1 week to prepare your order.  A Cajun sausage loaded with spices and ingredients including ancho chile powder, garlic, red pepper and gumbo filé. It is commonly used in Cajun cuisine such as gumbo and jambalaya.  It is smoked on low heat for five hours with cherry wood.

    I just tried this, the second item I have consumed out of the impeccably packed and shipped box from Sam's. I cooked 1/2 of the large, carefully packaged sausage for my dinner last Sunday, with a baked potato as side. It was delicious and the house took on a cozy smell of smoked fruitwood afterwards. The meat within the sausage is fine textured and leaner than your typical store-bought item. I really enjoyed it, but frankly, suspect my 'in a hurry' cast-iron pan roast/broil approach that is fine for greasy store-bought stuff didn't do it full justice, the flavor is 'dense' and complex, not in a 'all over the map' way but in a 'take your time and no need to add a lot of other stuff' way. Next time i will either be a little more thoughtful with the temp I subject it to, or perhaps use it in a stew or tomato-based concoction. I now realize 'smoke', in Sam's case, is an ingredient more like' truffles' than 'salt' and there is a lot of potential to do interesting culinary things here. Glad I tried it, I will definitely be a repeat customer. Person in Virginia

    Sam’s andouille sausage is fresh and flavorful, spicy and smoky. It is perfect for jambalaya, gumbo, and other New Orleans style recipes. So much better than the mass produced products in the grocery stores.

    I am a very picky gumbo maker. Great flavorful andouille sausage is at the center of a good gumbo finished product. I looked long and hard to find the best andouille for my gumbo including Louisiana. This andouille lived up to all my expectations. This is a great product!

    I was looking for Andouille Sausage to make jambalaya and couldn't find any locally. I searched the internet and found Sam's Butcher Shop. I read great reviews and decided to give Sam's a try. I ordered Andouille, Brats, and Kielbasa and crossed my fingers, hoping the meat would live up to the reviews. The sausage came packed in ice and arrived right on time. The sausage was wonderful! So much better than store bought. What a difference! The Andouille was so flavorful, seasoned to perfection. The brats also were superb. I haven't tried the Kielbasa yet, looking forward to grilling it soon. The shipping fee almost deterred me from ordering but I'm glad I placed my order. The quality of the sausage was worth the shipping charge. I will be ordering again.

    I do like spicy foods, but not food with spice that overwhelms. This is sausage is wonderful. Just the right amount of spice, heat, and smoke. The flavors blend well for an experience of some heat and bite.

    Outstanding Andouille Sausage!

    My wife made a delicious thin crust pizza featuring Sam's smoky & spicy Andouille Sausage with peppers,mushrooms, olives, and red onions, among other ingredients. We topped it off with Cajun Chef spicy green hot sauce. Sam makes an outstanding Andouille sausage, comparable to anything in Louisiana. It has the right amount of smokiness & spice. I highly recommend it, but it is not for the faint of heart.     I was looking for some Andouille sausage comparable to the best from Louisiana and this was it. The spice, heat and texture were just right - as good or better than any Louisiana Andouille I've ever sampled. I highly recommend it.

    Best sausage since my butcher shop closed here in Florida. Great spicy flavor for gumbo and etoufee. Also used with skewered shrimp on the grill.
