The $25 charge is only the deposit fee and the total price of your turkey will be based on the weight of the turkey that you choose.  The turkey farm charges $3.99/lb for turkeys and capons.  I charge $4.00/lb to smoke the turkey and the total smoking fee is based on the net weight after smoking, so you should expect about a 25% weight loss after the smoking process.  For instance, if you order a fresh 20 lb turkey, you would end up with about 15 lbs after the turkey is smoked.  Therefore, I would charge you $60 to smoke the turkey (15 lbs X $4/lb).
