I use small-batch, artisan gouda from Calkins Creamery in Honesdale, PA. I cold smoke it with cherry wood. This celebrated Dutch cheese has a savory, nutty flavor, pale yellow interior, and an almost buttery finish.

Nice, Tasty Cheese
I'd give this cheese Five Stars, except I learned I am not as keen on a smoked Gouda as I thought I would. Still, it's a fine cheese, and in my opinion, well worth the price. My son liked it, and I will order again. Another winner for Sam.
