The porchetta’s fork tender consistency results from many hours of slow cooking on low heat. Re-heat in the oven on 325 F to an internal temperature of 125 F, and check the temperature every half hour. It should take at least one hour to fully re-heat.

best Porchetta we have had outside of Italy

wonderful flavor
It's hard to find pork roast with the right amount of fat. This is excellent and reminds me of porchettas my grandmother prepared.
